Well, you don’t mention what part of Mexico, but I assume you are looking for a beach.
The best all inclusive is Club Med, it is present in most of the following destinations:
Best beaches are in Can Cun -
Largest beaches are in Mazatlan ( great if you like fishing )
More fun in Acapulco
More familiar is Puerto Vallarta
Cabo is perfect for families
Mexican people is really friendly and client focus.

It seems you have an interest in Cabo seeing as that is the area you indicated so first I will focus on that. The All Inclusive I have had excellent luck with is the Riu Palace Cabo San Lucas which is right by the town there. See in Cabo there are 3 areas you can stay in, 2 of which are not near a town and are very quiet. The Melia’s are another good choice, but those are away from town.
Another place in Mexico I will always recommend for Families is the Mayan Riviera area which is South of Cancun. There are several hotel choices in that area that cater to families. How old are the kids?

I have heard the RUI,s anywhere are extremely kid friendly…..look into that place(s) throughout Mexico
